Happy Friday! What are you up to this weekend? We’re at the lake to kick off the summer season. We’ll have a full house, which is always fun.

This weekend I hosted book club and we discussed The Woman in the Library. Have you read it? We all agreed we liked it but we had questions! Lots of lively conversation ensued.

I made these spinach lasagna rollups for my book club girls and they got a lot of thumbs up. The recipe doesn’t call for meat, but I added 1/2 pound of browned ground beef and 1/2 pound of browned Italian sausage. I also used frozen spinach instead of fresh and subbed mozzarella cheese for the Monterey jack. The jarred sauce I used was Rao’s marinara (it’s Ina approved!).
